Handmade Christmas – red onion relish

A great gift to grace any festive table

I’m handmaking Christmas this year, and some of my presents are edible.

This recipe for red onion relish is a winner because it’s simple, tastes great and will go with all the delicious cheeses that you, your family and your friends feast on during the festivities. And although it takes a while, you can wrap a few presents in between stirs!

You will need
Makes two jars:
800g red onions (that’s about six onions)
175g raw cane sugar
300ml red wine
300ml red wine vinegar
Splash of vegetable oil
Pinch of salt and pepper

1. Finely chop the onion into slices and fry off in the oil.

2. Add the salt, pepper and sugar and boil for 30 minutes.

3. Add the red wine and red wine vinegar and boil until it looks thick and relish-like. This will take about 45 minutes but you can judge how it looks. Stir it every few minutes to check on its progress.

4. Sterilise the jars by placing them in the oven heated to 100ºc for ten minutes.

Pour in your relish, and enjoy!
